New Idea

Okay, so with the rise in gas and groceries, I have decided to find recipes that are cheap and easy. I try to make them as nutritional as possible. I made a meal tonight that I thought was pretty tasty. Most of the ingrediants are pantry items. Here is the recipe. Let me know if you try it and like it.

Southwestern Lasagna

1 can black beans, rinsed and drained
1 can whole-kernel corn with red and green peppers, drained
1 jar (16 oz.) chunky mild salsa
1 pkg (10 oz.) fajita-syle cooked chicken
1/4 cup chopped fresh cilantro leaves
5 (10") low-fat flour tortillas
2 cups shredded reduced-fat monterey jack cheese
fat-free sour cream

Heat oven to 425
1. In a medium bowl, combine black beans, corn, salsa, chicken, and cilantro.
2. Coat the bottom of baking pan with vegetable cooking spray. Place 1 tortilla in coated pan. Top with 1 1/2 cups of the bean mixture and 1/4 of cheese. Layer 3 more times, finishing with the last tortilla.
3. Bake in oven 15 to 20 minutes, or until cheese melts and filling is hot. serve with sour cream, if desired.

You could even make this without the chicken, due to the fact that black beans have a high protein. My goal is to have a new easy meal once a month. Enjoy this recipe, it is super easy.

Here's a yummy, inexpensive, and pretty healthy recipe for you - I just made it this morning. Perfect for when you have a few over-ripe bananas left and you don't want to wait for them to blacken to make banana bread!

BANANA PANCAKES
2 ripe mashed bananas
1/4 cup white flour
3/4 cup wheat flour
2 tsps baking powder
1/2 tsp salt
1/4 tsp cinnamon
dash of nutmeg
1 Tbsp sugar
1/2 tsp vanilla
1 cup milk
2 eggs
1 Tbsp vegetable oil.

Mix dry ingredients and wet ingredients separately. Combine - will be lumpy & runny. Pan cook like regular pancakes. Top with applesauce or your favorite syrup.
